Degumming is the first step of a oil refinery plant and is key to the vegetable oil refining process. Typically, oil degumming is achieved through two ways: hydration oil degumming and special oil degumming. Hydration oil degumming involves the addition of hot water since impurities like phospholipids, gums and proteings are soluable in oil but insoluable in water. In this way, the impurities can be separated. The separated gum (once dry) can be made into lecithin or added into cakes or meals. Hydration degumming improves the oil’s edibility and storage potential.
Deacidification is another step in the edible oil refining process. Oil deacidification is also known as neutralization. It neutralizes fatty free acids in the oil using caustic soda, thereby converting the acids into soaps. These soaps are easily removed by decantation or by centrifugal force.
Bleaching is carried out before deodorization in the edible oil refining process. The process removes color, as well as residual phosphatides, metals and soaps. To do this, clay is added to the oil then heated, upon which it absorbs pigmentation. Lastly, the oil-clay mixture is filtered and the spent cake is dried to remove the oil.
